SEL SAINT LAURENT — The first sea salt harvested in Quebec, crafted with love in Les Bergeronnes on the Haute-Côte-Nord.

In the depths of the St. Lawrence River estuary, the Labrador Current carries water of rare purity from the Arctic. This deep water, known as the mesopelagic stratum to marine biologists, lies beyond the reach of light. In this layer, there is no mixing with surface organisms such as algae, plankton, krill, fish — or pollutants. It is from this crystal-clear water, drawn from depths of over 200 meters, that this salt is made, giving it a unique, delicate taste that is less iodized than many other sea salts.

Unlike salts from Europe, which may contain plastic particles or traces of coliform bacteria, Sel Saint-Laurent stands out for its exceptional purity. For the spring and summer 2021 harvests, the salt was collected from the shores of the Saguenay-St. Lawrence Marine Park, a marine protected area. Water tests confirmed excellent surface water quality with a salinity of 30.5 grams per liter, indicating that the Labrador Current rises along underwater cliffs to blend with the surface layer. For this reason, water is collected at high tide to ensure optimal purity. With approval pending from Fisheries and Oceans Canada, future harvests will once again be sourced from 200 meters below the surface, as with the 2020 winter harvest.

The harvesting process involves complex engineering and marine biology studies to protect this unique ecosystem, which sustains life for whales, belugas, and other marine species. Every effort is made to minimize environmental impact and respect the delicate balance of the marine park.
